I'm not familar with the rest of the Americas but here in Costa Rica, in the North Pacific, they are very popular. We release all rooster fish that are caught.
I spoke with my husband who is a Tico (Costa Rican) to find out the answer to your question.....Rooster fish are found anywhere from Mexico down to Colombia. Here in Costa Rica, they are released because there was a time they were over fished so the locals stopped fishing rooster to eat. Rooster meat is hard and not so tasty but it was food on the table. They put up a great fight and are a beautiful fish.
